What I Eat In A Day/ Unprocessed / WFPB Vegan
What I eat in a day unprocessed WFPB vegan is What I will be sharing with you today. I will also be showing you some food prep vs meal prep. There is a difference and I think food prep is so much easier. These unprocessed recipes are super easy to make. The full recipes are below.
To make my Japanese sweet potatoes
Wash potatoes, cut into quarters and place on a lined baking sheet, bake at 400 degrees on convection until soft.
EASY OATMEAL
2 cups oats(or 1 1/2 cup oats and 1/2 cup oats w/flax and chia and aramath)
4 cups water
cinnamon
sliced banana and blueberries
Bring water to a boil then add oats and simmer until you get the consistent you like. I did 10 minutes. Top with lots of cinnamon, sliced banana and fresh blueberries.
To make my steamed Yukon gold potatoes
Add 1/2 cup water into your instant pot and place a steamer basket inside. Add as many potatoes as you would like. Use the steam function for 15 minutes and then do a quick release.
To make the potato, carrot and chickpea mash
3 cups chopped Yukon gold potatoes
1 cup chopped carrots
1 15 ounce can rinsed and drained chickpeas
1 1/2 cup finely chopped spinach
1/4 tsp each, salt, onion powder, garlic powder, smoked paprika
1/4 cup unsweetened plant milk
1/4 cup cooking water
Boil the potatoes and carrots until fork tender
Drain but reserve a 1/2 cup of cooking water.
Add potatoes and carrots back to the same pot and add cooking water
Mash the potatoes and carrots until mostly smooth, add spices and chickpeas and mash again till mostly smooth, Add plant milk and mix well and add spinach, mix and let it sit for 5 minutes for spinach to wilt a bit.
Big Salad
5 ounces spring mix
chopped cherry tomatoes
chopped cucumber
defrosted frozen peas
fresh, or frozen corn
1 Tablespoon each chopped cilantro and parsley
microgreens
add everything to a bowl and add 3-2-1- dressing
You can add starch of your choice to the salad.
RECIPE FOR 3-2-1 DRESSING
3 Tablespoon balsamic or flavored balsamic vinegar
2 Tablespoon Dijon mustard
1 Tablespoon pure maple syrup.
add all to a jar and shake well.
