lunch recipe:
1 carrot
1 zucchini
1/4 head broccoli
1/2 cup salt reduced chicken stock
25mls tamari
1/2 tsp onion powder
1/2 tsp smoked paprika
3 eggs
1 tsp sesame seeds
Kewpie mayo (to taste)
Salt & pepper (to taste)
SautΓ© all veg with chicken stock, tamari & spices, stirring occasionally until veg is cooked and liquid has absorbed. Remove from heat and set aside. Whisk eggs in a bowl and pour into a small nonstick pan (lined with olive oil) over a low heat. Cover and cook for 3-4 mins before flipping. Cut omelette into squares and add back in with veg. Stir in sesame seeds, serve in a bowl and top with kewpie mayo, salt and pepper!
