2 13.5 oz cans of full-fat coconut milk.
1 cup of pitted dates, soaked in warm water for 15 minutes.
1 teaspoon of vanilla extract.
1 half a teaspoon of sea salt.
Ingredients for the salted caramel sauce:
1 cup of coconut cream.
1 cup of coconut sugar.
1 teaspoon of sea salt.
Instructions:
In a bowl, mix the gluten-free graham cracker crumbs, melted coconut oil, and maple syrup. Press the mixture into the bottom of a springform pan to create the crust.
In a blender, combine the ingredients for the salted caramel ice cream. Blend until smooth and creamy. Pour the mixture over the crust and freeze for 4 to 6 hours or until set.
In a saucepan, combine the ingredients for the salted caramel sauce. Cook over medium heat, stirring constantly, until the mixture thickens and caramelizes. Let the sauce cool.
