No Chick'n Caesar Wrap



This vegan “chickn” wrap is so good and easy to make. Mushrooms are sometimes called veggie meat because they have a meaty texture and mouthfeel. The key is to season them well to have the right flavor. The spices I list in this recipe are on point, but, as with all of my recipes, you may want to add a little more salt if you typically use a fair amount of salt to season your food. Be mindful that excess salt is detrimental to your health and sometimes even more so if you are vegan.

Veggie “Chickn”

8-12oz fresh oyster mushrooms
1 tsp parsley
1/4 tsp thyme
1/4 tsp oregano
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp onion
1/4 tsp mustard
1/2 tsp of salt or TO YOUR TASTE

Add mushrooms to pan on medium-high heat.
Cook until water from mushrooms begins to release.
Add seasonings and continue to cook until water has cooked off and mushrooms begin to brown on some spots.

Putting together your wrap:

Pile your veggie “chickn” on your flat bread. Top with lettuce, tomato, avocado, or any other toppings you’d like. Generously drizzle caesar sauce over top.

Caesar Dressing

1/2 cup cashews
1/4 + 3 tablespoons water
2 tbls lemon juice
2 tbls nutritional yeast
1/4 tsp dulse flakes
2 cloves garlic
1 medjool date
1/4 tsp pepper
1 tsp salt OR TO YOUR TASTE
1/2 tsp parsley

Combine all ingredients in high-speed blender. Blend until smooth.
