How I’ve been planning a weeks worth of meals to save money, time and reduce waste and stress!
I hope this is helpful to someone! πŸ‘πŸΌβ˜ΊοΈ quick note! Remember if you make a meal plan you love you can reuse it, and gradually you’ll build up a selection of weekly menus to pick from! Ooooh πŸ˜™ And you don’t HAVE to eat the meals on a certain day, as long as the ingredients don’t go bad you can swap them around when you like.

Oats and Berries
I used cinnamon oats, and heated up a bag of mixed frozen berries with a sprinkle of cinnamon on top. You can use whatever berries, oats or plant milk you like to customise it.

Tofu Thai Green Curry

I alter this recipe a little. I fry some Cauldron Tofu Pieces in the last few minutes to stir into this and minus the lemon and chilli (usually, I tried the chilli when I filmed this but it was way too much for me!)

Smoothies…endless possibilites!
The one in this was a Pack’d Frozen Smoothie Pack, bought from Iceland and made with apple juice (their green ones are nicer, in my opinion)

Creamy Broccoli Bake
My own recipe! Ooooh 😁
Not perfected yet. This was the first time I made it. Hopefully I’ll have a better and more precise recipe for you eventually. For this version I heated some rice milk in a pan, it’s hard to say how much as I just did it all by eye. Added a tablespoon of alpro yoghurt, my favourite is the almond but Tesco only had coconut πŸ˜ͺ Added nutritional yeast, a bit of arrowroot powder to thicken, (I prefer cornstarch but we were all out, forgot to add that to the list!) a little bit of salt, pepper and garlic powder. Keep tasting and altering until to your taste. More yeast for cheesiness, more milk if the yoghurt is too strong. Cook spaget, cook broccoli, add everything + capers into an ovenproof dish. Cover with breadcrumbs, a little nooch, salt and pepper maybe and cook (at approx 190C) until a crispy on top but not dried out. Serve with a sprinkle cashew pieces πŸ‘πŸΌ

We make better cheese sauce than this, this one was an experiment. Cheese sauce recipes coming soon too!

Tofu Bacon BLT Sandwich

I used garlic powder instead of onion (didn’t have any garlic but it still tasted amazing) and I used the Dragonfly Marinated Tofu block (Holland and Barrett often stocks them) plus added extra maple :p It was so goooood.

I don’t have an actual tofu press yet so I’m sill using books for now :p
