A RAW, VEGAN version of your favorite bread!…Im referring to the delectable Indian flat bread called Naan bread! It’s replicated here for your taste bud pleasure. Have fun and get creative by adding your own personal touches with any toppings you can think of! Then toss in the dehydrator and let it do it’s magic.
From the new (un)cookbook by Cara Brotman this delicious, garlic naan is gluten-free, wheat-free, dairy free, has no added sugars but the ability to nourish your body, thereby helping it to it’s job, not fighting it. It’s hard to remember just how destructive to health certain popular foods are when we’re hungry and at a loss for other ideas, or time or money.
Sure this takes a little extra effort to make, but whats the alternative, the real thing? Every time we eat gluten it negatively effects the body. Anything we traumatize on a regular basis , sooner or later, begins to breach.
Since understanding how foods effect the body, I avoid whats not helpful, and take advantage of foods that aid and helps restore and maintain the body and all it’s parts and functions.

Garlic Naan (makes 2 large rounds)
2 FRESH Young Thai coconut meat
1 cup shredded (on grater) yellow onion
Topping suggestions:
1/4 cup onion, minced
2 cloves garlic, minced
1 Tablespoon olive oil
1 Tablespoon fresh parsley
1/4 teaspoon thyme leaves
1/4 teaspoon red pepper flakes
1/4 black or white sesame seeds
Pinch salt
Squeeze excess moisture from onion so it’s dry as you can get it. Add to blender with coconut meat and blend on high till smooth. Pour half of mixture onto dehydrator sheet and spread evenly using an offset spatula. Or, gently drop tray from hands, a few inches from counter top a couple times, till it’s evenly spread out enough. Repeat with other half of batter.
Drizzle the olive oil around both then evenly sprinkle the topping suggestions on top. Dehydrate at 130-140 (or it may not dry out! Most peoples dehydrators are way off in temp! I made a video about that. I measured temps in different brands off dehydrators after running for hours and they were surprisingly off from the temp it displayed) for a 4 hours or until dry enough to flip on a mesh sheet in order to evenly dry out. If you don’t know how to flip it without tearing it, @2:52 minutes in Cara demonstrates the proper way of flipping foods onto mesh trays. Naan is ready when completely dry, anywhere from 7 to 12 hours, depending on climate and dehydrator brand.
