Hello dear friends, I hope you are all doing well.
In today’s video you can watch a small piece of my everyday life, as always the most pleasant.
Our Sunday meal was prawns with orzo, a tasty meal that is a good idea if you are thinking about what to cook today.
The new week started by tidying the house and baking a vegan chocolate cake, a real temptation!!!
One of the easiest and most delicious cakes I’ve ever made!!!

Recipes

Vegan Chocolate Cake

Ingredients
1 cup sugar
3/4 cup vegetable oil
1 1/2 tbsp vinegar
1 1/2 tbsp cognac
2 vanillas
1 pinch of salt
Zest from 2 oranges
2/3 cup orange juice
1 tbsp soda
1 cup water
1/2 cup cocoa
3 cup all-purpose flour
3 tbsp baking powder

Instructions
Add the sugar, oil, vinegar, cognac, salt, zest of 2 oranges, vanilla to a bowl and mix with a spatula until the sugar melts.
Dissolve the baking soda in the orange juice and add them to the bowl with the rest of the ingredients.
Add the water.
Sift the flour, cocoa and baking powder and add them to the mixture.
Mix with a spatula until the ingredients are combined.
Pour the mixture into a greased cake pan.
Bake in a preheated oven at 160 C for 30′.

Shrimps with Orzo

Ingredients
600g of shrimps
1 cup orzo (or rice)
1 onion
2 cloves of garlic
1-2 carrots
10 cherry tomatoes
1/2 cup tomato sauce
2 cups hot water or vegetable stock
Olive oil
Salt and pepper
Parsley for serving

Instructions
Sauté the shrimps with the garlic in olive oil on both sides for about 2-3 minutes.
We place them on a plate with absorbent paper to absorb the excess oil.
Sauté the onion and carrots in olive oil,
add the orzo and continue sauteing until golden,
add the cherry tomatoes, the tomato sauce and then gradually add the water or vegetable broth, salt and pepper and cook on medium heat until the orzo is cooked al dente.
Finally, add the shrimps, a little parsley and leave for 2-3 minutes to combine the flavors.

Tips
The taste will be even better if you
– add coriander or star anise during cooking (not both together) and
– if you serve with a tbsp of cream cheese.
