SLOW LIVING IN ITALY// SIMPLE VEGAN MEALS

Pea & Fava Bean:

Serve 2-3 people

2 cup of frozen peas
1 cup of frozen broad beans
1 onion – finely chopped
3 garlic cloves – crushed
a small bunch of mint – finely chopped
1 tbsp of olive oil
the juice and zest of 1/2 lemon

Add the fava beans to a large pan and cover with boiling water. Cook for 8-10 minutes until soft. Drain then peel off the skin.
Add the oil to a frying pan. Add in the chopped onion, cook for 8-10 minutes until caramelised. Add in the crushed garlic and cook for another minutes. Add in the peas and cooked fava beans and cook for 10 minutes until the peas are cooked. Add the chopped mint, season with salt & pepper and add the lemon juice and zest.

Green smoothie:

Serve 1:

1-2 frozen banana
big handful of greens
piece of ginger
the juice of 1/2 lemon
1/2 avocado
water to bend or coconut milk to blend

Just blend everything until smooth and creamy.

Pea & Fava Bean Risotto:

Serve 2

1 cup of risotto rice
1 onion or leek – finely chopped
3 garlic cloves crushed
800ml of veggie stock
1 cup of frozen peas
1 cup of frozen fava beans
1 tbsp of olive oil
a squeeze of lemon `and a sprinkle of lemon zest

Cook the fava beans as above removing the skin.
Add the oil to a pan. Add the onion and cook for 8-10 minutes. Add the garlic and cook for 1 more minute. Add in the rice and stir everything together. Add in the peas and cover with the stock. Keep cooking and stirring and keep adding the stock as it gets absorbed. About 10 minutes in add the fava beans. Keep cooking until the rice is tender. Season with salt and pepper and the lemon juice and zest.
