Speedy Satay Sauce Noodles – gluten-free & vegan ready in 15 minutes!



Today I am showing you how to make one of my favourite go to weekly dinners. It’s a great recipe after a busy day when you just want an easy, healthy, delicious meal ready in 15 minutes. It’s gluten-free, vegan and uses simple ingredients you may already have at home!

Serves 2

▪️ 2 thumb sized piece of ginger
▪️ 1 red onion
▪️ 1 garlic clove
▪️ 1 broccoli head or tenderstem
▪️ 1 pepper sliced
▪️ 1 carrot
▪️ 150g rice noodles
▪️ 3 tbsp peanut butter
▪️ 2 tbsp tamari
▪️ 1 tbsp sesame oil
▪️ 1 lime

1️⃣ Firstly slice your ginger + onion + garlic + ginger + broccoli + pepper + peel your carrot into long ribbons
2️⃣ Heat a non stick frying pan with oil adding in all what you just prepped to fry for 5-10 minutes
3️⃣ Meanwhile boil the rice noodles (as packet instructions)
4️⃣ Now make the satay sauce by adding the peanut butter + tamari + sesame oil + 1 tbsp of water + juice 1/2 lime and whisk until smooth (you can add more water if it’s too thick)
5️⃣ Finally, drain the noodles adding to the frying pan with the veg, pour in the satay sauce and mix together before serving with a squeeze of lime juice

FAQ’s

➡️ What if I am not gluten-free? Simply swap the tamari for soy sauce and you can also use whichever noodles you prefer!
➡️ What other veg could I use? Aubergine, courgette, kale, basically anything you have lying around in the fridge could be chucked in
➡️ What if I have a peanut or nut allergy? If you can have peanuts then swap for another nut butter such as almond or cashew. If you have a nut allergy swap for tahini
