Happy Wednesday #livingplantfullyFAM !!!! Today I’m sharing with you all my scrumptious recipe for the ULTIMATE vegan breakfast frittata! All of the components of my favorite breakfast in one! This frittata can be adapted to anyones liking (thats the best part about it!) you can add anything you’d like to it, vegan sausage, mushrooms, tomatoes etc. And if you wanna add some vegan cheese on top or mixed in, go ahead! the world is your vegan frittata!! You definitely gotta whip this beauty up for your next brunch and wow all of your friends and family. Enjoy

Ingredients
Hashbrown layer
2 small potatoes (peeled and thinly sliced)
2 tsp oil
1/2 tsp smoked paprika
S+P to taste

Veggie layer
2 tsp oil
1 medium white onion (diced)
1 C of mixed bell peppers (diced)
S+P to taste

“Egg” mixture
1 lb or 1 block of medium-firm tofu
1 C unsweetened non-dairy milk
1/3 C tapioca starch
1/2 C nutritional yeast
1 tsp black salt or more to taste
1 tsp dijon mustard
1/2 tsp turmeric
1 tsp garlic powder
1/2 tsp black pepper or more to taste
