If you’re looking for a quick vegan soup recipe, I have one here for you!! Its savory, delicious and full of flavor. It’s also gluten free and made only with organic whole foods. Just what the body and soul need

Heres how to make it!

Servings: 4

Ingredients ~

2 tbsp extra virgin olive oil
1/4 cup chopped carrots
1/4 cup diced yellow onion
2 cups chopped fresh tomatoes
1 tbsp minced garlic
1 tbsp tomato paste
1 tsp sea salt
1 tsp black pepper
1/2 cup veggie broth
1 tbsp miso paste
28 oz canned whole tomatoes (Mutti brand)
2 tbsp coconut sugar
1 tbsp dried oregano
1 tbsp dried basil
handful of fresh basil
1 tbsp thinly chopped chives
1/2 cup soy milk unsweetened plain

bread add-on: 1 serving size

2 slices of ciabatta pumpkin bread from Whole Foods Market
1 slice Follow Your Heart smoked gouda cheese
1 tbsp Miyokos vegan butter

In a medium-sized sauce pan, heat up the olive oil over medium heat. After a couple of minutes add in the chopped carrots and chopped yellow onion salt and pepper. Sauté for about five minutes covered with the lid. Then add in the chopped fresh tomatoes and garlic. Sauté for about 10 minutes. Turn off heat and transfer to blender. I’m using my Vitamix which I highly recommend for blended soups.
In your blender, add in the sauteed carrots and onions mixture, tomato paste, veggie broth, miso paste, whole canned tomatoes, coconut sugar, dried oregano, dried basil, fresh basil, chives and soy milk. Blend until you get a creamy texture (will take about 3 minutes). Taste test and see it has enough salt, if not then add in 1/2 tsp at a time until you get your desired taste.
I bought some fresh pumpkin ciabatta bread at Whole Foods market and paired 2 slices with 1 slice of vegan Follow Your Heart smoked gouda cheese! To melt the cheese on your bread, heat up some vegan butter, I used to Miyokos Brand and add in 2 slices of ciabatta, the sliced cheese, cover and heat on low heat for about 10 minutes. This bread is great for dipping 🙂
