VEGAN VAN LIFE THANKSGIVING | w/ Eamon and Bec!



How did we manage to celebrate Thanksgiving with vegan food living the van life? We’ll show you! This is our first vegan Thanksgiving so it was a little bit of a challenge (especially with the limitations van life puts on us all the time) but I hope you like it!

We especially loved the vegan mac-and-cheese. WOW. It was so freaking good.

Mac-and-Cheese Recipe:

INGREDIENTS:
1 bag of macaroni
1 1/2 cups of cashews
1/4 cup of nutritional yeast
1 cup of vegetable broth
1/2 of an onion, chopped
1 roasted pepper
1 tsp. cayenne pepper (optional)
1/2 tsp smoked paprika

Cook pasta according to instructions on the package.

Combine the rest of the ingredients in a blender. Blend together until smooth. Pour over cooked and strained macaroni noodles. Serve with some extra paprika and/or cayenne on top. Enjoy!

Cranberry Apple Sauce Recipe:

INGREDIENTS
3/4 of a bag of cranberries (or as many as you would like)
2 chopped apples (you can use apples too)
1/4 cup of chia seeds
1 tsp. vanilla
1/8 cup agave (or any other sweetener)
water

Add all ingredients together. Pour water over the top until you see it peeking through the cranberries and chopped apples. You really don’t need that much, just enough to help it cook down.

Cook (stirring at intervals) on medium-high heat until you can’t really tell the difference between the cranberries and apple. Add more sweetener to taste. Enjoy!

Pumpkin Balls:

INGREDIENTS:
1 can of pumpkin
1 1/2 cups of oats
1/8 cup of flax seeds (or any other seeds/nuts you like)
1/2 cup of unsweetened shredded coconut
1 tsp. of vanilla extract
1/4 cup of sweetener of your choice (we used agave)
1 tsp. cinnamon
1/1 tsp. ginger
1 tsp. nutmeg

Blend oats dry to make them into a powder. Add to a bowl. Add everything else to a bowl and mix together. (I’d recommend adding half of the can of pumpkin first and adding more as you go to achieve your desired moistness.)

Make mixture into balls and roll in coconut or crushed nuts or anything else you want on the outside. We LOVED these with maple syrup on top and mixed with the cranberry apple sauce!
