WHAT WE EAT IN A DAY | vegan vanlife + recipes



We loved making a What We Eat in a Day Video last time, so we thought we’d make another one! I’ve loved figuring out how to make vegan food over our van life travels. The limitations are a challenge, and I think we’re getting better and better!

Our favorite dish to make for a while now has been pad thai, and I’ve figured out how to make an awesome vegan version (I don’t promise that it’s authentic, though). Let me know if you try it!

RECIPES:

Oatmeal Recipe:

1 1/2 cup of oats
2 1/2 cups of water
1 chopped apple
1 tbls. of peanut butter
5-6 chopped dates
1/4 cup of chia seeds
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
1/4 cup coconut sugar

Add everything together and cook until thick. We served it with cacao nibs on top.

Pad Thai Recipe:

1 package of rice pad thai noodles
1 package of very firm tofu
1 onion
1 bell pepper
4-5 green onions
2/3 cup soy sauce
2/3 cup water
1/3 cup brown or coconut sugar (can substitute agave)
1/3 cup rice vinegar
1/3 cup tahini
1 tbls. red or green curry paste
1 tbls. sesame oil
1 lime
(optional) sesame seeds or crushed peanuts

Cook the noodles as instructed by the package.

Cook tofu in a frying pan with a splash of olive oil and soy sauce. I usually cook these until crispy.

After tofu is finished, add chopped onion, chopped bell pepper, and chopped green onions to the tofu. Cook until onion is translucent.

While that is cooking, make the sauce. Mix soy sauce, water, sugar, rice vinegar, tahini, curry paste, sesame oil, and lime juice.

When tofu and vegetables are finished cooking, add cooked rice noodles, then pour the sauce over the top. Cover and let simmer for 5-10 minutes. Serve with an extra lime on the side and some sesame seeds or crushed peanuts on top!
