3 Easy Vegan MICROWAVE Meals (Dorm Room Friendly)

• Nutritional Yeast:

• Sweet Potato Chickpea Boats: Poke some holes in as many sweet potatoes as you desire and microwave for 4-6 minutes, flipping halfway. Serve over greens and stuff with chickpeas and tomatoes, topping with nutritional yeast, hot sauce, and a squeeze of lemon if desired.
• Spinach and Veggie Salad: Mash 1/2 of an Avocado in a bowl with the juice of 1/2 a lemon, salt, and pepper. Add in large handfuls of greens and fold them into the dressing. Toss in chopped tomatoes, fresh basil, chickpeas, and a small handful of blueberries. Stir well and serve.
• Sweet Potato “Toasts”: Cut each potato into 1/2″ width and microwave for 2-4 minutes, flipping halfway. For a savory version, top with avocado, salt, tomatoes, basil, and nutritional yeast. For a sweet version, top with avocado, blueberries and cinnamon.
