3 Easy Vegan Recipes for Beginners | Breakfasts and Snacks

Vegan Yogurt Bark:
Serves 4-6
1.5 cups vegan yogurt, Kite Kill or Soy Delicious work well (I like vanilla, strawberry, or key lime for this recipe)
2 handful of granola or crushed graham crackers
2 cups of fresh or frozen berries
1/3 cup vegan chocolate chips
1 tsp coconut oil

Combine the chocolate chips and coconut oil in a microwave-safe bowl and heat in 20 second intervals, stirring in between, until melted.

Next, place a sheet of parchment paper on a large dinner plate and spread the vegan yogurt evenly on top. Sprinkle the granola/graham crackers and berries on top. Generously drizzle with the melted chocolate and freeze until solid. Then break into pieces and enjoy!

Tip: Spread it thicker for creamier frozen yogurt bark, or thinner for a popsicle texture.
