4 Ingredient Vegan Meal Ideas

#1 Simple Jackfruit Bowl
1 cup millet, dried (200g)
1 can jackfruit in salt water (400g)
1-2 tsp oil
marinara sauce
~ 1 ½ cups marinara sauce (350 ml)
1-2 tsp sweetener, if needed

→ serves 2 – 3
#2 Loaded Lemon Sweet Potatoes
2-3 medium sized sweet potatoes
salt, pepper to taste
1 tbsp oil
zest of ½ lemon
1 avocado, mashed
juice of ½ lemon
beans
hot sauce, optional
→ bake for 32 – 38 minutes, if you use 2 baking sheets, the one at the bottom will take a bit longer of course
→ serves 2
#3 Lazy Lentil and Coconut Dahl
⅓ cup coconut dessicated (30g), blended to flour if preferred
1 cup lentils, red (200g)
1 1/2 cups vegetable broth (375ml), more if needed
1 onion
season with salt, lemon juice, smoked paprika, garlic powder and dried herbs to taste
→ serves 2
#4 Cauliflower Mac and ‘Cheese’
3-4 yellow onion, roughly cut into rings
1 tbsp oil
1 head of cauliflower, cut into florets (400 – 500g)
enough vegetable broth to almost cover the cauliflower, about 1 ½ cups (375ml)
400g pasta (14 oz)
salt, pepper, lemon juice, garlic powder, basil and smoked paprika to taste
optional: 1/4 cup vegan cream (60ml)
→ serves 4
