|| ELECTRIC LUNCH 1 || Spelt grain salad w/ ginger tahini dressing (serves 2-3)

2 cups cooked spelt (1 cup dried)
1 ½ cup kale (remove stem)
3 tbsp. olive oil
1 red pepper
100g cherry tomatoes
½ red onion
100g raisins

Ginger tahini dressing

200g tahini
1 tsp. cayenne
1 tbsp. dried oregano
1 lime (juice)
sea salt (to taste)
2 inch ginger piece (grated)

|| ELECTRIC LUNCH 2 || Brazil nut & kale pesto w/ roasted butternut squash (serves 2)

½ butternut squash (approx. 1 ½ cups when cubed)
1 tbsp. grapeseed oil
1 tbsp. dried sage or thyme
sea salt (to taste)

Pesto

2 cups kale (remove stem)
50g fresh parsley
2 limes (juice)
4 tbsp. olive oil
75g brazil nuts
2 tsp. onion powder

2 ½ cups cooked quinoa to serve

1 cup warm chickpeas
2 tbsp. tahini
3 tbsp. olive oil
sea salt (to taste)
1 lime (juice)
1 tbsp. dulse flakes
½ red pepper
100g cherry tomatoes
70g fresh coriander
½ red onion

|| ELECTRIC LUNCH 4 || Squash falafels (approx. 12 falafels)

1 cup butternut squash
3 cups cooked or 2 cans chickpeas
1 tbsp. tahini
30g fresh parsley
30g fresh coriander
2 tbsp. onion powder
2 tbsp. dried dill
2 tbsp. dried oregano
1 tbsp. cayenne
1 small white onion
½ cup chickpea flour
sea salt (to taste)
1 tbsp. grapeseed oil

Tahini dressing

2 tbsp. tahini
½ tsp cayenne
sea salt (to taste)
1 tsp dried dill
1 tsp dried oregano
1 lime (juice)
¼ cup water (add more for thinner consistency)

200g spelt pasta
1 avocado
3 cups fresh basil
sea salt (to taste)
lime (juice)
½ cup walnuts
