EASY PLANT BASED RECIPE / Lentil Soup / Whole Food Plant Based / Starch Solution



Hi & welcome to Joy with Plants! My name is Milly & I follow a High Carb – Low Fat, No Oil Plant Based Diet.

I have been Plant Based for over 9 months now but have been Whole Food Plant Based for 4 months. It has been the best decision I have made for my health and my life. I love this way of eating and I want to share how you can love it too. It has restored joy in my life as I had struggled with food for many years. For the first time in my life food is not something I am enslaved to but a blessing to be enjoyed.

I’ve learned to eat delicious food without counting calories or portion control. I am left satisfied and full with more than enough energy to focus on the things I love!

The ingredients I used for this Lentil Soup:
1 – 1 1/2 Cup Green Lentils
2 Gold Potatoes
3 Carrots
1 1/2 Bell Peppers
1 Zucchini
1 Yellow Squash
1 Jalapeño
1 Can of Corn
2 Tomatoes or sub small can Tomato Sauce
A few Cilantro stems
1/4 Onion
2 Garlic Cloves
2 Tsp Better than Bouillon or sub veg stock
1Tsp Cumin
21 Seasoning or sub your fav seasonings
Pepper
Dash of Salt if needed
& Can’t leave out the Tapatio!

Start by chopping up all of your veggies. In a blender add your tomatoes, cilantro, onion & garlic and blend. Add hot water to a pot and add your rinsed lentils and bring to a boil (can also be started before you start prepping your veg). Once your pot comes to a boil add your bouillon or stock followed by the tomato sauce you prepared. Cover with lid and allow the lentils to cook. Once cooked add your chopped veggies, can of corn & your spices. Add more water to reach your desired consistency and add more bouillon or dash of salt. Mix together & cover with lid until the veggies have cooked. Serve & add Tapatío to try my favorite way of having it! Trust me it makes it a thousand times better!

This soup is seriously delicious & super filling. Have a big bowl and eat up! Because of all the veggies we added to it, it is low in calorie density allowing you to eat a lot more volume & still allow you to reach your weight loss goals without counting calories! It is Starch Solution compliant!
