Easy Vegan Mashed Potatoes Steamed | Easy Vegan Recipes

▶️ RECIPE INGREDIENTS:

2.2 lbs / 1kg – Yellow Yukon Gold Potatoes (peeled/washed/cut into cubes)
3 Garlic Cloves
3/4 cup/ 175ml Warm Milk (Unsweetened, Unflavoured Plant-Based Milk)
2 Tablespoon Olive Oil
Lemon Juice to taste (I have added 1+1/2 tablespoon of lemon juice)
Salt to taste (I have added 3/4 teaspoon of pink Himalayan salt)
Ground Black pepper to taste (I have added 1/4 teaspoon)
OPTIONAL – 1 to 2 Tablespoon /3g to 6g of Fresh Dill OR CHIVES (if you don’t prefer dill then add herb if your choice)

PLEASE NOTE : Dill has a unique flavour. If you are using it for the first time, I would recommend tasting it first to see if you like the flavour, before adding it to the the potatoes. Other options are Chives and Parsley. HOWEVER, if you like your mash potatoes plain skip the herbs.

▶️ METHOD:

Peel, wash and then cut the yellow Yukon gold potatoes into cubes. Transfer it into the steamer basket and Place it in top of a pot of water to boil. Steam the potatoes for about 20 minutes or until the potatoes a cooked through.

Once the potatoes are steamed well. Put them through a potato ricer. I find using a potato ricer makes the best mash potatoes, they are light and airy. Also there are no lumps. If you don’t have a ricer you can use a sieve it works equally well.

(Compared to the potato masher or food process which actually turns the potato gummy and pasty)

Add the milk, olive oil, lemon juice, salt, pepper and dill (or herb of choice) and mix well. Do not over mix it otherwise the potatoes will get gummy.
