Eggplant Dip, Vegan Cooking Show by Kyong Weathersby



Amazingly delicious Eggplant Dip for any occasion. Gluten-free, Plant Based, Vegan, Cholesterol-free.

Eggplant Dip

1 large eggplant
¼ medium onion, chopped
1 clove garlic, minced
1 green onion, chopped
½ tsp salt
1 T nutritional yeast flakes
1 tsp olive oil

Take skin off from an eggplant. Cut in small cubes. Steam for 20 minutes or until tender. Put steamed eggplant in a bowl and mash well with a masher or process in a food processor. Add remaining ingredients and mix well. Serve with flat breads, veggies, chips, etc. Yummy!
