FAST Udon Noodles Recipe | EASY VEGAN RECIPES



Learn how to make an easy vegan udon noodle soup with absolute confidence!

LAY HO MA! Everyone has those long work days when you come home and cannot be bothered. This comforting udon soup recipe is not only delicious, but “souper” easy to make. Let’s begin.

Ingredients:
1 small piece daikon
1 small carrot
1 tbsp minced ginger
2 tbsp minced garlic
1 bok choy
1 bundle dried udon noodles
1/2 cup dried mushroom mix
2 tbsp sesame oil
2 sticks green onion
2 1/2 cups water
1 tbsp soy sauce
1/2 tbsp white sesame seeds
few shreds of nori

Directions:
1. bring a pot of water to boil for the noodles
2. thinly slice a small piece of daikon radish and roughly chop the carrot
3. mince the garlic and ginger. Half the bok choy
4. boil the udon noodles as per package instructions. Occasionally stir the noodles
5. strain the noodles through a sieve when cooked
6. heat up another pot on medium high heat. Add the sesame oil
7. add the garlic and ginger
8. finely chop the white part of the green onion and add into the pot. Sauté for about a min
9. add the carrot, daikon, mushrooms, and 2.5 cups water
10. cover and cook for 10min. Add the bok choy and soy sauce 8min in. Cover and cook for the remaining time
11. place the noodles in the serving bowl and pour over the hot soup
12. top with finely chopped green onion, sprinkle of white sesame seeds, and some shredded nori
