Hey friends and welcome🌞 Let me bring you along on some of the food I ate this week that made me feel great! – reminder I didn’t show you everything I ate, but instead I brought you along on only some of the delicious food I enjoyed!

Mushroom Latte:
1 heaping tsp reishi mushroom
1 heaping tsp lions mane mushroom
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp maple syrup
3/4 cup milk ( frothed )

Big Pan of Oven Baked Stuff:
1 small cooking onion
2 small / medium red skin potatoes
2 ribs of celery
1 large carrot
handful of white or cremini mushroom
4 cloves garlic
2 stacks kale
1/2 block extra firm tofu
1/3 cup chopped cilantro
1/4 cup chopped parsley
1/2 cup chopped basil
2-3 tbsp olive oil
2 tsp salt
1/2 tbsp black pepper
chilli flakes to taste
1 tsp dried oregano
1/2 tsp thyme
3 tbsp pumpkin seed ( **I recommend 1/3 cup chopped walnuts!!**)
1/2 cup dried basmati rice
1 1/4 cup water

– Preheat oven to 400F
– chop everything as shown, through everything into a oven safe large pan ( one with a lid preferably ) bake for 35-40 minutes
– serve with lemon juice!
