How To Make Tofu Scramble Eggs | Vegan Recipes for Beginners | How to Eat Healthy



This is the easiest Vegan Tofu Scrambled Eggs Recipe!

Ingredients:
1 pkg Hard, Medium, Firm or Extra Firm Tofu
1 onion
1/2 bell pepper
1/2 a medium potato
1 Tbsp oil
1 tsp salt or Black Indian Salt for eggy flavor
1 tsp black pepper
1 tsp tumeric for color
2 tsp paprika

Directions:
Drain and press tofu and set aside
Sautee diced onions on medium heat for 2-3 mins or until translucent
Add diced potatoes in pan with onions until fully cooked
Crumble tofu and add to pan OR put full block of tofu and mash on pan with onion/potatoes
Add seasonings
Cook for 2-3 mins. Do not over cook!
Serve with toast, hot sauce, or waffles and enjoy!

Store leftovers in refrigerator for up to 7 days.
