My Favorite Plant Based INSTANT POT Meals for Weight Loss / Vegan, The Starch Solution



Today I am sharing with you some of my favorite plant-based instant pot meals for WEIGHT LOSS. These meals are vegan and great if you eat a starch-based diet, or follow The Starch Solution. I ate all of these while I lost 50 lbs of fat and still eat them now to maintain and stay healthy. *Don’t have an Instant Pot, no problem, you can still throw all of the ingredients in one pot and be done :). I hope you guys enjoy these vegan, plant-based meals as much as I do.

Since I don’t go over step by step instructions for the Lentil Marinara – here is the link to the blog recipe –

And the Potato Curry and chili:

Potato Curry
2 cloves of garlic
1/2 large onion
3-4 large potatoes
1 tsbp curry powder
1 tsp garam masala
1 tsp turmeric
1 can light coconut milk
1 tbsp tomato paste
5 oz fresh or canned tomatoes
1/2 – 1 C peas
large handfuls of spinach
cook in the instant pot on high pressure for 15 minutes. Manual release
on stove top cook until potatoes are soft

Potato and White Bean chili/soup
1 tsp chili powder
1/2 tsp chili flakes
1/2 cilantro
1 -2 cups corn
2 cloves garlic
1 onion diced
1/2 tsp oregano
3-4 Yukon gold potatoes
1/2 tsp thyme
32 ounces veggies broth
1 tsp smoked paprika
1 tsp cumin
1-2 cans of white beans
Put in the instant pot and cook on high pressure for 15 minutes. Manual release
on stovetop cook until potatoes are
