Plant Based Weeknight Dinner for Family of 7

Weeknight dinners in our home can be quite simple and today we are showing you what we make! Including a little breakfast prep for the next day. Come along and watch what we made for dinner on a weeknight.

Recipes – We don’t measure much in our home cooking but here’s a guide for what we made to help you:

Muffins
6-7 small to medium sized bananas mashed
1/2 cup coconut oil
1 1/2 cup coconut sugar
1 tbsp apple cider vinegar
3 tbsp ground flax + 6 tbsp water
Vanilla (optional)
3 cups oatflour
1 tsp baking soda
Walnuts, oatmeal and chia seed add ins optional and add however much you want!
Spoon into jumbo muffin tins and bake at 350 F for about 35 mins until done

Chickpea Patties
Soak 3 cups of chickpeas overnight
The next day, drain and rinse your chickpeas and add to a blender. Add enough water just to cover the chickpeas plus 1 cm extra
Season with whatever you like!
Blend until smooth and then fry on a hot skillet on medium high in some oil of choice for about 2 mins per side or until golden brown
