SPINACH POTATO CURRY
3 cups chopped and peeled potatoes

1 1/2 tbsp avocado oil or vegan butter
3 green chilies finely chopped
1 tbsp grated ginger
1/2 tbsp cumin seeds
1/4 tsp asafoetida
1/4 tsp turmeric
1/2 tbsp garam masala
1 tsp salt

2 fresh tomatoes
3-4 cups chopped fresh spinach
1/4 cup fresh cilantro
A big squeeze of lemon juice

The magic
– add oil to pan and heat
– Once hot add in cumin seeds followed by the green chilies and ginger and sauté. Add in the rest of the spices and mix on low heat
– Throw in your potatoes and cook for 20 minutes at medium heat with the lid on. Keep an eye on it to make sure nothing burns
– Add in spinach tomatoes and fresh coriander and put the lid back on to cook for another 5 minutes
– Once potatoes are cooked and spinach and tomatoes have softened squeeze In the lemon
– Garnish with chopped fresh coriander
