Vegan Filipino Adobo #shorts



VEGAN FILIPINO ADOBO. Full recipe below. Perhaps the most well-known Filipino dish worldwide is the humble adobo. It has simple ingredients that carry a symphony of flavors. This vegan version also hits the spot with just the right notes, especially when enjoyed with a side of rice. Kain na, let’s eat!

INGREDIENTS:
1/2 kilo firm tofu
1 cup cornstarch, plus 1/2 teaspoon
1/4 cup oil
1 yellow potato, chopped
1 cup oyster mushrooms
8-10 cloves of garlic, minced
1 cup water
1/4 cup soy sauce
2 tablespoons vinegar
3 tablespoons brown sugar
5-6 pieces bay leaves
Black pepper

DIRECTIONS:

In a bowl, coat the tofu and mushrooms in cornstarch

Heat a large pan over medium heat and pour the oil.

Once the oil is hot, fry the tofu until golden on all sides. Follow with potatoes and keep cooking until the potatoes are dark golden.

Add the mushrooms. Season with salt and mix well. Cook until the mushrooms are slightly crunchy on the outside.

Lower the heat and mix in the garlic.

In a bowl, combine the water, soy sauce, vinegar, brown sugar, and 1/2 teaspoon cornstarch. Mix well.

Pour the liquid mixture into the pan and add the bay leaves and pepper. Mix well.

Cook for 3-5 minutes over low heat. Adjust seasoning to taste.

Turn off the heat and serve hot with rice.
