It’s incredibly delicious, easy and quick recipe. Why I have never cooked potatoes like this before? It’s so tasty that my family and kids ask me to make it almost every day! 🥣 Ingredients :
2 medium size potatoes
1/4tsp salt
1/2tsp Italian herbs

🥣 topping ingredients:
1 tbsp tomato sauce
dairy free mozzarella
mushrooms for topping (I used about 4-6 closed cut mushrooms )
8-10 cherry tomatoes
60g | 1/4 cup chickpea
olive oil
chilly flakes
parsley

🧑‍🍳Cooking tips:
❗For the topping you can use the vegetables you like, for example bell pepper, spinach, cannellini beans etc. Please also feel free to add your favourite spices and herbs 😊

🥣Method:
Peel and grate 2 medium size potatoes.
Place grated potatoes in a mesh bag or sieve.
Squeeze potatoes over a bowl to remove excess water.
Transfer potato mixture into a mixing bowl.
Season with 1/4tsp of salt and 1/2tsp Italian herbs.
Combine well together.
Transfer potatoes mixture into a greased frying pan and spread out into a circle.
Fry on a low heat covered with a lid for about 7 minutes or until the bottom is crispy brown.
When cooked on one side, flip it gently to other side.
Spread 1tbsp tomato sauce.
Add grated plant-based dairy free mozzarella cheese.
Cut 6 mushrooms and 8 cherry tomatoes for the topping.
Add 60g | 1/4 cup chickpea.
Season with Italian herbs.
Top up with dairy free mozzarella cheese.
Cover with a lid and fry until cheese melted.
Sprinkle with fresh chopped parsley and chilli flakes (optional).
