What a Vegan with Celiac Disease Eats in a Week!



What I ate in a week – mostly dinners! Everything is vegan and gluten free!

Meal #1 Soy Sauce Marinade:
4 tbsp gluten free soy sauce
3 tbsp water
1.5 tbsp maple syrup
1 tsp garlic powder
1 tsp onion powder
1.5 tbsp rice vinegar
3 garlic cloves, minced(optional)
few shakes chili flakes or chili oil(optional)
1-2 tbsp peanut butter(optional)

Meal #2 Tofu Egg Seasoning:
1/2 cup nutritional yeast
4 tsp black salt(kala namak)
2 tsp onion powder
2 tsp garlic powder
1 tsp turmeric
1/4 tsp black pepper
– 1 block extra firm tofu + 2 tbsp tofu egg seasoning

Meal #3 Pancakes:
1 cup 1:1 gluten free flour
1/4 cup all purpose gluten free flour
1/2 tsp salt
2 tsp baking powder
2 tbsp cane sugar
1/4 tsp cinnamon
1 tbsp hemp hearts(optional)
1 1/4 cups plant milk
1 tbsp vegetable oil
1 tsp vanilla
handful vegan chocolate chips(optional)
– whisk all dry together, add all wet ingredients and whisk, then fold in chips if using
