Mix ground chia seeds with water (1 tbsp ground chia mix with 3 tbsps water) Stir let sit for 15 mins.

2 Min. Microwave Tofu Scramble:
Ingredients:
1 cup tofu, crumbled extra firm
1 tbsp nutritional yeast
1/8 tsp italian seasoning
1/8 tsp turmeric
1/8 tsp paprika
3/4 tsp soy sauce
Directions:
mix together with a fork,
microwave for 1 min stir to combine.
top with fresh parsley and salsa.
