GUIDE TO VEGAN THANKSGIVING / HOLIDAY FEAST (2017)



There’s gotta be something wrong with me with how many technical difficulties I had with this video… It’s ridiculous.
Sorry this is up so late, & that it’s pretty lazy-seeming. I always wish I could do more. Next semester I will be taking a smaller course load (hopefully) and so I’m looking forward to more time for YouTube.

SWEET POTATO CASSEROLE
Shopping List:
* sweet potatoes
* non-dairy butter/margarine
* cinnamon & nutmeg
* brown sugar
* non-dairy milk
* flour
* salt
* pecans
* AND vegan marshmallows

ORIGINAL:
I just used almond milk for the “milk or half and half” part.

SWEET POTATOES & APPLES & WALNUTS
Shopping List:
* sweet potatoes
* granny smith apples
* vegan shortening
* walnuts
* cinnamon
* nutmeg
* ginger
* cloves
* salt
Last year I used a vegan-friendly shortening called NUCOA. This is now available at Walmart (or at least my Walmart) & it’s what I recommend works best.

WILD RICE STUFFING
Shopping List:
* vegetable broth
* olive oil
* an onion
* some celery
* garlic
* vegan butter
* granny smith apples
* pecans
* cranberries/craisins
* sAGE
* AND salt & pepper
This recipe called for brown rice & wild rice but I found this Rice Blend at the store that included white, brown, wild, and red rice & so I used that.

TIP: Broil it a little at the end of baking.

ORIGINAL:

CREAMED CORN / CORN BREAD CASSEROLE?
* vegan Butter
* vegan Corn Bread Mix
* 2 cans Creamed Corn
* 1 can Whole Kernel Corn
Recipe called for 8.5oz of corn bread mix & the Trader Joe’s box was 16oz, so I just used half.

The recipe says 1 can of each type of corn but a review below recommends to try 2 cans creamed vs 1 can whole kernel so that’s what I ended up doing.

I also added salt pepper & paprika.

ORIGINAL:

GREEN BEAN CASSEROLE
same as last year, but no blanching or homemade fried onions

* green beans
* olive oil
* garlic
* mushrooms of ur preference
* flour
* vegetable broth
* unsweetened plain non-dairy milk
* salt & pepper

MAPLE SRIRACHA SAGE BRUSSEL SPROUTS & more
Shopping List:
* brussel sprouts
* carrots (optional)
* purple onions (optional)
* (or any other veggie u want tbh doesn’t matter lol)
* maple / agave syrup
* olive oil
* sriracha
* liquid aminos / soy sauce
* lime juice
* sage & cranberries (optional if u want it more thanksgiving-y?)

ORIGINAL: Just ignore the Cranberry Wild Rice (I mean unless u wanna make that)

TURKEY-LESS TURKEY / ROAST THINGS

Shopping List:
* vegetable broth / bouillon
* liquid mains / soy sauce
* flour (u can shake it up w/ a lil water to mix in easier)
* olive oil
* (optional) mushrooms would also be nice
* seasoning of ur preference
I think bouillon works better because then ur not adding more liquid/watering it down. Makes it more flavorful.

MASHED POTATOES
Shopping List:
* potatoes!!!!
* vegan butter / olive oil
* salt / garlic salt
* pepper
* chives
* unsweetened non-dairy milk
* bruh idk u should know how to make mashed potatoes by now lmao

PUMPKIN PIE
Shopping List:
* canned pumpkin
* silken tofu
* sugar
* cornstarch
* cinnamon
* nutmeg
* vanilla extract
* salt
There’s a different pumpkin pie recipe in the last one btw.

ORIGINAL:

PIE CRUST
Shopping List:
* 2 Cups AP Flour
* 1 Cup non-dairy shortening or butter
* 1 Teaspoon Salt
* about 1/2 cup of cold water (add spoon by spoon as you stir it in)

**HALF IT IF NECESSARY
