Lemonade Cake Recipe (Vegan Hack)



The guys from Lemonaid came into our studio with a bottle of their passionfruit lemonade, so naturally we made a cake with it πŸ™‚ It was really gooey and delicious and definitely worth a try!

Ingredients:

Cake:
1.5 cups self-raising flour
1 cup caster sugar
1 cup lemonade
1/3 cup vegetable oil
1⁄2 tsp salt
1 tsp bicarbonate of soda
1⁄2 tsp vanilla essence

Icing:
1 cup icing sugar
1/2 cup dairy free butter
1 tsp vanilla essence

Method:

1 Put all the cake ingredients in a food processor and blend until well mixed. We used Passionfruit Lemonaid, but you can use any lemonade you fancy.

2 Pour the mixture into a baking tray and bake for 40 minutes at 180℃ (350℉)

3 Meanwhile, make the icing by blending the ingredients together.

4 Once the cake is cooled, ice it and serve
