Breakfast cookies
Ingredients:
4 very ripe bananas, mashed
4 tbsp natural peanut butter
2 tsp vanilla extra
¾ c. maple syrup
4 tbsp plant milk
¼ tsp salt
2 tsp baking powder
4 c. old fashioned rolled oats
½ c. vegan chocolate chips

Method:
Preheat oven to 375 F and line two baking trays with parchment paper.
In a large bowl, mix together bananas, peanut butter, vanilla extra, maple syrup, and plant milk until well combined. Then stir in the rest of the ingredients.
Form into cookies, slightly flattened, and place on parchment-lined trays.
Bake for 17 minutes.

Hummus
Ingredients:
2 cans chickpeas
Juice of ½ to 1 lemon
2 tbsp tahini
2 cloves garlic
1 tbsp cumin
Splash of water (find your favorite consistency)

Method:
Combine all ingredients in a food processor until smooth and combined.

Energy Balls
Ingredients:
1 c. shredded coconut
1 ½ c. oats
2 tbsp nut butter
1 cup of dates (soaked if not juicy!)
½ tsp vanilla extract
1 tbsp hemp seeds
2 tbsp ground flax seeds
Optional: cacao, cacao nibs

Method:
Combine all ingredients in a food processor.
Roll dough into balls and refrigerate.
