Vegan Holiday Meals: Weight loss friendly/WFPBNO



Looking for some vegan holiday meal inspiration? Look no further! Join me in the kitchen as I whip up two incredible dishes that will satisfy even the pickiest eaters. Learn how to make Maple Glazed Brussel Sprouts that are crispy on the outside and tender on the inside, and a soul-warming Holiday Hash Soup that will keep you cozy all winter long. MAPLE GLAZED BRUSSEL SPROUTS
1 pound Brussel sprouts
2 T balsamic glaze
2 T maple syrup
1/2 tsp salt
Wash and pat dry Brussel Sprouts
cut off the very end of the sprout and cut in half and add to a bowl.
Once all the Brussel sprouts are cut add the maple syrup and balsamic glaze to the sprouts and toss well. Add the salt and toss again making sure all the sprouts are coated. Place on a lined baking sheet in a single layer and place in a pre-heated oven @ 375 degrees for 30 minutes. You can flip after 20 minutes if you would like. Serve with a drizzle of the balsamic glaze
HOLIDAY HASH SOUP
14 cup water
1 1/2 chopped onion
2-3 carrots chopped
2-3 celery stalks chopped
2 cups chopped butternut squash
4 small Yukon gold potatoes chopped
1 sweet potato chopped (I used a Japanese sweet potato)
1 Tablespoon poultry seasoning
1/2 tsp. salt
2 tsp. chopped garlic
1 can rinsed and drained white beans
4-6 cups water or broth
1 1/2 cubes of not chick’n bouillon cubes if not using broth
2 cups chopped kale or spinach
1 1/2 Tablespoon lemon juice
Start by preheating a large pot with 1/4 cup water
Add the onion, carrots, and celery to the pot and saute for 5 minutes or until veggies are softened. Add the garlic and cook for 1 minute then add the seasonings.
Then add the butternut squash, potatoes, sweet potato, water or broth and the bouillon cube if you are not using broth and add the beans. Bring to a bowl and then reduce to a simmer and place the lid half on the pot. Cook until the potatoes are fork tender. Finally add the greens and lemon juice.
