What I Eat in a Day + My Vegan Beauty Routine!

Vegan Apple Muffin Recipe
makes 12 muffins
2 1/3 cups old fashioned oats
2 tbsp cinnamon
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1.5 cups unsweetned almond milk
1/2 tsp apple cider vinegar
1 tsp vanilla
2 tbsp maple syrup
1/2 apple, grated
1/2 cup unsweetened apple sauce or mashed banana
6 large medjool dates, pitted and chopped
Preheat oven to 350 degrees.
In a small bowl, combine almond milk and apple cider vinegar. Set aside.
Blend 2 cups of oats in a blender until it becomes flour. Transfer to a bowl and add oats, and remaining dry ingredients. Mix well.
Add vanilla, maple syrup, apple sauce, grated apple, and chopped dates. Stir and add to dry ingredients.
Transfer to a lightly greased muffin tin. Bake for about 15 minutes or until cooked though. Insert a tooth pick in the center to make sure they’re done.
Serve warm with peanut butter, vegan butter, or jam 🙂
Store leftovers in an air-tight container for up to 4 days.
