I make vegan chicken from soy curls – a minimally processed vegan meat alternative that takes on a texture similar to grilled chicken strips. An easy and decadent vegan dinner that even meat eaters will love!

➡️ INGREDIENTS:
1/3 of an 8-oz bag of dry soy curls
1 vegan no-chicken bouillon cube (I used Edward & Sons brand)
Boiling hot water (enough to cover the soy curls in a bowl)
1 medium yellow onion, sliced into strips
1/2 large red bell pepper, sliced into strips
Avocado oil, as needed for sautéing
Shredded vegan cheese, about 1/3 cup per quesadilla
2-3 large flour tortillas*
*This makes enough filling for 2 thick or 3 thin quesadillas
Spices** (per 1 quesadilla):
1/2 tsp Dried oregano
1/2 tsp Ground cumin
1/2 tsp Chili powder
1/4 tsp Paprika
1/4 Chipotle chile pepper
**Measurements are approximate, feel free to use more or less to taste
