what i eat in a busy week – easy & quick vegan meals

🍇 recipes:
base overnight oats: 1 cup oats, 1 cup soy milk, 1 tsp flax seeds, 2 tbsp apple sauce

wild garlic pesto: 2 big handfuls wild garlic + ½ cup extra virgin olive oil + 1 tbsp salt

baked muesli: ½ cup bircher muesli (contains raisins, giji berries, hemp seeds, sunflower seeds) + ½ cup soy milk + 1 tbsp maple syrup

chocolate loaf: 2 cups flour, 1/2 cup oats, ¼ cup cocoa powder, salt, 1 tbsp baking powder, 1 flax egg, 1 tbsp apple cider vinegar, 4 tbsp sugar beet syrup, ½ block dark chocolate
bake for 35 minutes at 180°c
