Vegan Eggy Muffins: My Go-To Recipe for Easy and Delicious Meal Prep!



Today I’m excited to share a delicious breakfast recipe from my Vegan Made Easy cookbook. We’ll be making Vegan Eggy Muffins that are not only a fantastic morning treat but also perfect for meal prep – they’re quick, easy, and super tasty. Let’s dive into the recipe!

Vegan Eggy Muffins – Quick and Easy Breakfast Recipe

– 170g firm tofu
– 3/4 cup plant-based milk (such as oat milk)
– 1 clove of garlic
– 1 tsp mustard (any type you prefer)
– 1 tbsp chickpea flour
– 1 tbsp cornstarch
– Dash of turmeric
– 1 tsp Italian herbs (oregano, parsley, basil, thyme, rosemary)
– Salt and pepper to taste
– Optional: black salt (kala namak) for an extra eggy flavor

Preheat your oven: Set it to 350°F (175°C).

In a blender, combine tofu, plant-based milk, garlic, mustard, chickpea flour, cornstarch, turmeric, Italian herbs, and salt/pepper. Blend until you achieve a thick consistency.

Use a silicone muffin tray for easy removal. Portion out the blended mixture into four muffin holes.

Place the tray in the preheated oven and bake for 25-30 minutes until the muffins are firm and slightly golden.

Allow the muffins to cool for an additional 5-10 minutes in the fridge. This will help them firm up.

Your Vegan Eggy Muffins are now ready to be enjoyed! Feel free to customize with additional ingredients like mushrooms, peas, or peppers.

These muffins are not just a tasty breakfast option; they are also excellent for meal prepping. You can double or triple the recipe, cook them in advance, and store them in the fridge or freezer for quick, nutritious breakfasts.
